Year after year, the white Savigny-les-Beaune from Domaine Simon Bize is one of the most impressive Village Chardonnays on the Côte de Beaune. It comes from various parcels around Savigny, which are characterised by clay and limestone soils. Spontaneously fermented with native yeasts and matured on the fine lees for up to 12 months in oak barrels. Elegant, profound and with mineral notes. Some fruit on the nose, but also smoke and wet pebbles. Then yellow apple, pear and stony notes in the mouth. Slight creaminess and recognizable notes from the use of wood. Goes well with poultry, mushrooms and spicy cheese.
