Step into the heart of Japanese culture through one of its most cherished traditions—home-cooked meals. In this class, we celebrate the simplicity, balance, and seasonal beauty that define washoku (Japanese cuisine). Each dish on today’s menu reflects the flavors of everyday life in Japan—nourishing, comforting, and crafted with care.
We'll be following the traditional ichiju-sansai style of meal preparation, which includes a comforting soup (ichiju) and three flavorful side dishes (sansai), served alongside rice and pickles. This balanced approach brings together variety and harmony, while embodying the essence of Japanese home cooking (katei ryori). You'll be guided through essential ingredients and techniques and then enjoy the meal together - just like at a Japanese family table.

Jem
Jem is a Japanese cook, avid fermenter, and permaculture designer based in Berlin. Raised in London with Japanese roots, she has always been drawn to umami-rich dishes and bold, inventive flavours. Her love of food and reviving traditional methods inspired her to found Fischtal Foodlab - a community space where she offers workshops in fermentation and Japanese cooking for fellow Berlin food enthusiasts. For Jem, food is all about bringing people together around something delicious - to connect, discover, share, and have fun!
