Luisenhaller Tiefensalz made from natural brine, is slightly coarser than the salt that's usually used in salt shakers, so we wouldn't recommend to use it that way. It's a fine salt with a great, clear saltiness that can be easily distinguished from industrially obtained salts. Luisenhall recommends dosing the salt with your fingers, and so do we: A tactile as well as tasteful experience.
The Luisenhall salt works in Göttingen is the last active pan salt works in Europe and is really worth a visit. The salt is extracted from concentrated brine from a depth of 450m. The brine is then heated in huge, flat pans until it crystallizes - a centuries-old process. Salt is not just salt and Luisenhall does not use any trickling aids like those used by other producers. In fact, the salt is still made the same way as it was centuries ago. We can't do without it!
