Willie's Cacao Rio Caribe Gold, Venezuelan 72, 50-g-Tafel Delectable Single Estate Cacao
One of Willies favourite road trips runs from the East of Caracas, along the Caribbean coast to a small village called Rio Caribe. And this is where the cacoa beans for Rio Caribe Gold are sourced, for dark chocolate with nut and coffee notes. Like all chocolate, Rio Caribe Gold is made in small batches, taking some days at low temperatures to produce. No vanilla or soy lecithin added, just cacao, raw cane sugar and natural cacao butter.
Willie Harcourt Cooze reminds us a bit of Willie Wonka. Long before the wave of many small chocolate manufacturers rolled in, Willie embarked on the adventure of being a "from bean to bar" chocolatier - at a time when only Cadbury chocolate was available in England. And we love Willie's visionary, original chocolate! It may not be as elegant, smooth, and tender as French chocolate, but it always tackles the characteristics of the respective bean accurately. Willie exclusively uses single estate cocoa in all his chocolates, so only cocoa from one specific farm and no blends are used.
