Pasta Fresca: Fresh Pasta Workshop in English
mit Edoardo Merlo

Pasta is associated with comfort food in Italy. With so many shapes and many sauces that can be mixed together, it is from hundreds of years the main meal in most Italian families. We will have a fun evening going through the basics of making fresh pasta. We will make three different types, including one filled pasta (ravioli), and three different sauces. Starting from scratch: making the dough, rolling it and giving it the shapes.

Edoardo Merlo

Edoardo was born in Bergamo, a little town in the north of Italy close to the mountains. It's the land of long cooking processes, cheese and polenta. Coming from a big family and a chef mother, food has always been at the center of his daily routine back home. He remembers his mother organizing cooking class at home and the amazing feeling of a full kitchen with a lot of people and food. He decided to become a cook at a quite young age and started to travel around the world having the opportunity to learn a lot from other countries' culinary roots. After one year in London, where he met his mentor who taught him a lot about bread and pasta making, he moved to New York where he had the opportunity to work in different restaurants with different types of cuisine. He then came to Berlin where he focused his passion of cooking on fresh pasta. After working for a few years at Pappa & Ciccia in Mitte, an organic restaurant based on Italian food, He has worked at Caligari in Neukölln, a little bistro with a very small menu and mostly focused on pasta.

Teamwork — Mehrere Teams bereiten jeweils einen (manchmal auch zwei) der Menüpunkte zu. Bei wichtigen Schritten, z.B. wenn es um grundlegende Techniken geht, könnt Ihr alle zusammen zuschauen bzw. mitmachen. Natürlich bekommt Ihr auch immer mit, was rechts und links von Euch passiert und dürft den Kursleiter mit Fragen löchern. Auf diese Weise lernt ihr viele unterschiedliche Gerichte und Menü-Bausteine kennen.
