So, it’s now available in our online shop, our first house wine. We created it in collaboration with the Steitz winery from Rheinhessen and we think it turned out quite well. It’s a Grüner Silvaner from the volcanic prime location of Heerkretz. Lots of fruit at the beginning, then comes the spice and minerality. Everything is geared more towards freshness and juiciness. It’s the perfect wine for asparagus but also pairs well with many other dishes, which is why it will also be our cooking school wine in the future. It is organically certified and the vineyard is even biodynamically managed. The seahorse refers to the fossils in the vineyard; in the lower part of the site there is shell limestone, as 260 million years ago this was the primordial sea. The sheep indicate natural farming practices. Last year, Heerkretz had a lot of moisture, threatening a fungal infestation that could ruin the entire harvest. Normally, pesticides, meaning chemicals, would be sprayed. But not here. Christian Steitz found a shepherd whose sheep nibble away the foliage and fertilize the vineyard but do not like grapes. Without the lower leaves, the vines were not affected by fungi and the vineyard was saved.
