It's a tiresome question: which wine goes well with fish, with vegetables, with meat? With Gastronome, Pierre Gimonnet & Fils has found an answer. As the name suggests, the idea is to create a champagne that can accompany a whole meal in the restaurant (or at home). Gastronome is vintage champagne made from 100% Chardonnay, with a focus on accessibility and drinking pleasure. The grapes come from various Grand Cru and Premier Cru sites on the Côte des Blancs. The wine then matures on the yeast for 36-48 months and develops slightly less pressure on the bottle. This creates a nice creamy mouthfeel. The nose is dominated by ripe yellow fruits, grated lemon peel and fresh dough. However, the typical Gimonnet freshness and clarity is unmistakable and makes it temptingly easy to drink.

Pierre Gimonnet makes wine grower champagne. This means that the Domaine only processes grapes from its own cultivation. Gimonnet specialises in Blanc de Blancs champagne, in his case only Chardonnay. In his Cuvée Cuis he uses only Chardonnay from the Premier Cru sites around his hometown.
