Now the red house wine is also available! It is a Corbières from the single vineyard La Pointe in Languedoc. It consists of almost equal parts Grenache Noir and Syrah. This wine is also organically certified and the vineyard is managed according to biodynamic principles. The producer is our long-standing partner Calmel & Joseph. The goal was to create a full and smooth red wine that is not too heavy and rich. As a result, it pairs very well with a variety of dishes, which it must do for use in the cooking school. For the most part, the wine matures in cement tanks, with only a quarter aging in wooden barrels for 12 months. This helps it retain its freshness and fruitiness. Red berries, pomegranate, black pepper, clove, and a slight smoky note. A lot of wine for the money. Oh yes, the label... The bird is the golden eagle, ubiquitous in the mountainous region of Corbières. The small figure is meant to represent a gendarme, which designer Jana immediately thought of when considering southern France. Maybe she’s watched too many Louis de Funès movies.
