A tamale is a traditional Mesoamerican dish made of masa (a dough made from nixtamalized corn) that is usually filled with meats, cheeses, vegetables, chilies, or beans, then wrapped in a corn husk or banana leaf and steamed until cooked.
Tamales Workshop for Candlemas Day
In Mexico, Candlemas Day is closely tied to tamales: a tradition born from the blending of pre-Hispanic and Christian rituals. On February 2nd, those who found the figurine of Baby Jesus in the Rosca de Reyes (Epiphany bread) on January 6th are expected to host a tamaliza—a tamale feast—for family and friends. In this workshop, we’ll celebrate this custom by preparing three different types of tamales, paired with a warm, comforting atole with a German twist.
