mimi Shiro Miso, 200-g-Glas
Mimi Shiro Miso, bright rice miso, from Berlin Moabit by Mimi Ferments. Markus Shimizu produces his misos and soy sauces exclusively by hand. Not pasteurized, matured for four months in stoneware in Berlin-Moabit. This light miso paste made from peeled rice is very complex in taste, sweet-spicy-yellow-fruity and delicately sour. Suitable for light miso soups, but also as an ingredient for dressing and fish. Also great in mayonnaise or sauce hollandaise. Mimi's white miso won first place in the comparative test of the Frankfurter Allgemeine Sonntagszeitung (FAZ) with star chef Tim Raue.
Markus Shimizu's miso pastes and soy sauces are not pasteurized, hence they are not preserved by heat and will continue to ferment. The pastes and sauces cannot spoil or turn bad, but they change constantly over time and their colour can also vary slightly. Because of this ongoing process the glasses are never airtight as they could explode otherwise.
