Mimi Shiro Miso, bright rice miso, from Berlin Moabit by Mimi Ferments. Markus Shimizu produces his misos and soy sauces exclusively by hand. Not pasteurized, matured for four months in stoneware in Berlin-Moabit. This light miso paste made from peeled rice is very complex in taste, sweet-spicy-yellow-fruity and delicately sour. Suitable for light miso soups, but also as an ingredient for dressing and fish. Also great in mayonnaise or sauce hollandaise.

Mimi's white miso won first place in the comparative test of the Frankfurter Allgemeine Sonntagszeitung (FAZ) with star chef Tim Raue.

Markus Shimizu's miso pastes and soy sauces are not pasteurized, hence they are not preserved by heat and will continue to ferment. The pastes and sauces cannot spoil or turn bad, but they change constantly over time and their colour can also vary slightly. Because of this ongoing process the glasses are never airtight as they could explode otherwise.


Shipping information:

Fermentation also continues during shipping, especially when temperatures rise. As a result, Shimizu's miso pastes and soy sauces can leak which is perfectly natural as the pressure tries to find its way out of the glass.

Because of this reason, we only send these products at cool temperatures and not on weekends. The delivery time agreed on with the purchase can therefore be extended in very warm weather. If this is the case, we will of course inform you.

We don’t assume any liability if:

  • the product leaks e.g. because of long storage in a post office,
  • the label is smeared.

We accept liability and reimbursement of costs if:

  • other products that were sent in the same package were damaged by the leakage of the fermentation products. In this case, we won't schedule a new delivery, but we will reimburse the costs.


Storage note:

The pastes and sauces should always be kept in the refrigerator, as this slows down the continuous fermentation. The ongoing fermentation also requires a certain amount of care: open the glasses once in a while so that any pressure can escape. Always use a clean spoon to take out the product of the jar and never use your fingers to do so.
