Maki Sushi
Roll your own sushi
with Jem Stevens

The Japanese classic of vinegared rice paired with fresh fish and vibrant ingredients, crafted into bite-sized rolls that are as beautiful as they are delicious. In this workshop you'll learn how to roll three delicious varieties of sushi rolls (maki sushi), so you can roll your own with confidence at home.

You will learn:

  • How to cook and season sushi rice
  • How to chop and prepare fillings for your roll
  • Practice rolling three types of classic maki-sushi: hosomaki (thin rolls), chu-maki (medium-sized rolls) and uramaki (inside-out rolls)
  • Pick up tips for beautiful presentations and serving at home
  • Enjoy the fruits of your labour with a shared meal featuring the sushi we’ve made and an authentic miso soup

Jem Stevens

Jem is a Japanese cook, avid fermenter, and permaculture designer based in Berlin. Raised in London with Japanese roots, she has always been drawn to umami-rich dishes and bold, inventive flavours. Her love of food and reviving traditional methods inspired her to found Fischtal Foodlab - a community space where she offers workshops in fermentation and Japanese cooking for fellow Berlin food enthusiasts. For Jem, food is all about bringing people together around something delicious - to connect, discover, share, and have fun!

Cooking in groups — In this class you will form small groups and each group will be cooking some of the dishes listed in the menu. The other dishes will be cooked by your fellow cooking class participants. However, important steps and basic techniques will be demonstrated in front of the entire class and/or practiced together. Of course you will also see and hear what is going on around you and you are very welcome to ask the teacher questions. The class is designed for you to experience diverse dishes and menu components.
Facilities:
