In this class, we’ll prepare northern-style beef barbacoa: large cuts of beef slowly cooked until meltingly tender, then chopped and served in homemade warm tortillas. This is market and roadside food, built on good meat, simple seasoning, and long, gentle cooking, meant to be eaten as generous, straightforward tacos.
