Good Pommard needs a little more time. The wine is unusually powerful by Pinot Noir standards, almost rustic in its youth. Pommard stands for dark fruit, lots of tannins and great ageing potential. The wines from the neighbouring village of Volnay, on the other hand, couldn't be more different, though both are based on the Pinot Noir grape variety. For friends of Burgundy, this is clear proof of the influence of the terroir. The Pommard from Rossignol-Changarnier stems from the parcel 'les Chanlins'. Ripe, red and dark berries, cassis and a little smoke. Deep, still a bit untamed, but with a lot of ageing potential. Goes well with roasts and stews.

Even savvy wine drinkers often leave it alone because they have experienced too many disappointments. The classification is complicated, there are strong vintage fluctuations, the wines need maturity and are getting more and more expensive. You can probably spend your whole life on the subject, looking for just the right, authentic and also affordable Burgundy. But fortunately for us, there are producers like the legendary Domaine Régis Rossignol-Changarnier from Volnay on the Côte d'Or. Règis was already involved in his parents' grape harvest in 1950 and has been in charge since 1966. Today, he is officially retired and his daughter Aleth and her team continue his great work. But Régis is still on board, of course, and is now responsible for a good 70 vintages. The wine style is as clear as it is great: the terroir is everything! This means that the influence of barrels as well as the winemaking methods are kept small deliberately. All wines mature for 13 months in oak barrels and then further in the bottle. After three years of ageing, the wines are finally released. This is because Régis does not like Burgundies that are too young. The wines are honest ambassadors of their environment, they are old-school in a good way: A Burgundy as it is no longer easy to find these days.
