A white balsamico "Condimento Bianco" from the cult house Giusti di Modena in Italy, where balsamic vinegar comes from. The "Bianco" tastes well-balanced and has little acidity. Even with its light colour it goes well with seafood, light salads or steamed vegetables. Delicious. So here you go.

Did you know that the most famous dark balsamic vinegar is made from white grapes? But then why is it so dark and why is this white balsamic vinegar white? Good question, isn't it? The answer is quite simple: Balsamico bianco is made from uncooked grape must and therefore "remains" white. The grapes for the dark balsamic vinegar are first boiled down. That`s increasing the sugar content, which darkens the must. Aha!
