Shabu Shabu: Japanese Hot Pot

Warm up on chilly Berlin days with Japan’s beloved hotpot, Shabu Shabu. This is a cozy social dining experience where you’ll cook right at the table—swirling tender slices of beef, tofu, and fresh veggies in a light, savoury broth before dipping them into delicious sauces.
Together we will:
- Prepare tender beef, tofu, and seasonal Japanese vegetables.
- Master two classic dipping sauces: refreshing citrusy ponzu and rich, nutty sesame.
- Cook and enjoy shabu shabu the authentic way—swishing ingredients in a simmering kombu broth at the table.
- Finish the meal with comforting udon noodles simmered in the flavourful hotpot broth.

- Shabu Shabu Hotpot:
- Thinly sliced beef and tofu
- Assorted vegetables: Chinese cabbage, chrysanthemum greens, enoki and shiitake mushrooms, spring onion, and carrots.
- Udon noodles
- Dipping Sauces:
- Ponzu (soy-citrus sauce)
- Creamy sesame sauce
- Japanese rice

Jem
Jem is a Japanese cook, avid fermenter, and permaculture designer based in Berlin. Raised in London with Japanese roots, she has always been drawn to umami-rich dishes and bold, inventive flavours. Her love of food and reviving traditional methods inspired her to found Fischtal Foodlab - a community space where she offers workshops in fermentation and Japanese cooking for fellow Berlin food enthusiasts. For Jem, food is all about bringing people together around something delicious - to connect, discover, share, and have fun!
