Simon Bize et Fils Bourgogne blanc Les Champlains Bourgogne 2019
The Bourgogne Blanc les Champlains is practically Simon Bize's entry-level wine, but it already has a good portion of character and complexity. Unusual for a Burgunder, it is not only made from Chardonnay, but always contains a few percent of Pinot Gris. Nevertheless, it is a very typical Burgundy, characterised by the stony terroir. Fermented spontaneously and matured in oak barrels for at least six months, this wine has great complexity. On the nose minerality, citrus, and some yogurt. Ginger, salted lemon, and orange peel on the palate. Well-integrated acidity and a full body round off the Blanc le Champlains. Goes particularly well with buttery sauces, mushroom dishes, and shellfish.
