Mimi Genmai Miso, very dark Reismiso, from Berlin Moabit by Mimi Ferments. Markus Shimizu produces his miso and soy sauces exclusively by hand. Not pasteurized. This very dark miso paste from wholemeal rice offers a very wide range of nutty-mushroomy taste, you can use it sparingly for marinades and fried or braised vegetables, or just classic for a deep spicy miso soup.
