Glorious German Grub: Winter Never Ends
Seasonal German food featuring herbs, salsify, beef and apples

Germany has more to offer than schnitzel, curry wurst et al. I would like to introduce you to German classics that are less known. I will pick popular German vegetables (e.g.salsify in winter, asparagus in spring, mushrooms in autumn), combine them with herbs (sorrel, borage.), and show you how to make dumplings. Most of the ingredients will be organic including the meat.

Please let us know if you are vegetarian or vegan or don't eat pork. There are alternatives.

Menu (example):

  •  Vegetable salad with Frankfurt Green Sauce: 7 herbs dressing, you will be introduced to burnet, borage, sorrel (you will probably have met parsley, chives, cress and chervil)
  •  Salsify Soup with smoked makerel: Salsify is often referred to as “winter asparagus” in German (and vegetable oyster in English). Anyway, it is delicious though a bit of a pain to peel.
  •  Bavarian Beef braised in red wine and spices (Böfflamott) with bread dumplings and savoy cabbage. A very Bavarian dish though with French roots, hence the red wine.
  •  Baked Apple Ice Cream with quark fritters (Quarkkeulchen)

  •  Vegetarians: Please let us know. We can substitute both fish and meat with seasonal vegetables.

Cooking in groups — In this class you will form small groups and each group will be cooking some of the dishes listed in the menu. The other dishes will be cooked by your fellow cooking class participants. However, important steps and basic techniques will be demonstrated in front of the entire class and/or practiced together. Of course you will also see and hear what is going on around you and you are very welcome to ask the teacher questions. The class is designed for you to experience diverse dishes and menu components.
