In the south of France handcrafted white vinegar made from unsulphured sweet wine. Very full of character. Can serve as a lemon substitute.

La Guinelle is one of the last remaining artisanal vinegar factories in France. At the foot of the Pyrenees the vinegars mature in wooden barrels and fermentation balloons. Time, good wine. Nothing else.
