In the south of France handcrafted red vinegar made from unsulphured sweet wine. Very full of character, rather sparing use. Similar to sherry vinegar. Traditional production. Absolute rarity.
La Guinelle is one of the last artisanal vinegar factories in all of France. At the foot of the Pyrenees, the vinegars mature in wooden barrels and fermentation balloons. Time, good wine. Nothing else.
