La Abuela Carmen's Pasta de ajo negro is a paste made from black garlic. Black garlic is created by slow fermentation, the sulphurous smell and taste of raw garlic are significantly softened and notes of liquorice and molasses come to the foreground. You can use black garlic as a milder substitute for the fresh or dried garlic and the paste can be used in many ways.
