Delfino Battista Colatura di alici fish sauce from Cetara in Campania, Italy, has been added to the ark of taste by Slow Food. The colatura is much more than just an anchovy fish sauce: it is THE seasoning sauce of Campania. The anchovies are cleaned directly after they've been caught. Then they're salted immediately and layered in wooden barrels. For weeks, the salt extracts the juice, which is caught and filtered. The sauce not only seasons Asian dishes but also gives pasta and vegetable dishes a special note. But be careful not to use too much salt when you're cooking: The sauce contains a high level of salt and you should season your pasta accordingly.
Delfino Battista has been based in Cetara, Campania, Italy, since 1950. Their main focus is on the regional specialty: Colatura di Alici di Cetara. It is not just a fish sauce, but THE seasoning sauce of the Amalfi Coast. Having anchovies at hand, it makes sense to make more canned food from those great little fish. In the meantime, Delfino even has canned vegetables on offer. Extremely good and very down to earth.
