Spaghetti Chitarra by Latini is a pasta sort with strong edges and a very rough surface. It perfectly absorbs any form of sauce. The name comes from the pasta machine, in which the pasta dough is placed over a "chitarra" (guitar), and then pressed through it. This creates four edges and a really very rough surface.
