Lawley's Rum 77% Chocolate is one of the most unusual and most expensive chocolates in our range. Alcohol-containing chocolates usually have a filling, but this really complex, aromatic rum chocolate is made in a completely different way: The cocoa chips made from Ecuadorian cocoa are soaked in rum for several days and as chocolate and water don't mix, the cocoa nibs first have to dry completely before they are further processed into the chocolate bar. Goodnow Farms Rum 77% is an unbelievably 'smooth' looking bar that makes you believe you are holding a glass of the best rum in your hand: The molasses/caramel notes of the rum go very well with the red berry cocoa notes. A real treat!
Goodnow Farms Chocolate is a small family business based in Sudbury, Massachusetts. Monica and Tom Rogan have turned their hobby into a profession and remain true to their initial uncompromising attitude: 'single origin' and 'from bean to bar' are taken even further here: The Rogans only use the self-pressed cocoa butter from cocoa, which is obtained for the respective batch, which is very unusual in chocolate production. The rather tender and almost shiny bar can be broken very easily, the chocolate has a very smooth texture and a long-lasting aroma. Admittedly, the bars have their price, but when you try them, you immediately understand why.
