The Vindaloo is a creation of the Portuguese-Indian community in Goa and is usually made with pork ? it derives from the Portuguese words for wine (vinho) and garlic (alhos). It is widely believed that vindaloo originally was made with wine, but wine that had become a little vinegary on its trip from Lisbon in Portugal. It probably began as a simple Indian stew for the Portuguese colonists, however it is now a symbol of a truly fiery Indian curry.
